Bright, airy dining room on the Plateau where tomorrow's chefs and sommeliers are cutting their teeth right now. The service is earnest — sometimes a little nervous, sometimes surprisingly polished — and the food punches well above what you'd expect from a teaching kitchen. Canadian ingredients treated with real care, not fussy technique. The terrace on Saint-Denis is prime people-watching when the weather cooperates. Go for the lunch service midweek — fewer crowds, and the students are sharper.
