You walk through the château gates of Saint James Paris and the city disappears. Bellefeuille is the starred restaurant inside — a room where the linens are heavy, the light is low, and the kitchen takes its time. The pergola garden is where you want to be when the weather allows, surrounded by ivy and stone and the kind of silence money buys in the 16th. The menu is classical French with enough precision to justify the prices, each plate composed like it means something. Open to non-members in the evening only — book well ahead, they do not take walk-ins. The sommelier knows the cellar cold, so let them lead. Come hungry, come dressed, and do not rush the cheese course.
