Buckwheat galettes done with real conviction — dark, nutty, crisp-edged, filled with combinations that actually make sense. The room in the Marais is tight and always full, so expect to wait or book ahead. Cidre served in proper bowls, cold and slightly tart, which is the only correct way to wash this food down. Yes, tourists flood the place, but the crêpes don't care — they're still excellent. Go for the complète and a bolée of brut cidre, no substitutions.
