The air inside is heavy with history — old wood, candle wax, and something faintly sweet that might be centuries of spilled Bordeaux soaked into the floorboards. You climb a narrow staircase into private salons where the mirrors still carry scratch marks, gouged by courtesans dragging diamonds across the glass to test if the stones their lovers gave them were real. That detail alone tells you everything about what kind of place this has been since 1766. The dining rooms are dark, gilded, slightly worn in a way that money can't fake and renovations would only ruin. Food leans classical and rich — think sauces built with the patience of someone who doesn't care about trends, plates that feel like they belong to a Paris most people only read about. The Seine sits right outside the windows on Quai des Grands Augustins, and at night the light off the water does something to those old walls that borders on theatrical. It is absurdly expensive, and some dishes land better than others, but you're not really paying for dinner — you're paying for a room that remembers more scandal than you'll ever live. Book one of the small private salons on the upper floor, specifically ask to see the mirror scratches, and go on a weeknight when the tourists thin out.
