The smell of butter browning in cast iron hits you before you even sit down at the narrow counter, mingling with the earthy funk of something deeply porky simmering in the back. This is Yves Camdeborde's left-bank operation, a place that does more with a plate of blood sausage ravioli than most Parisian restaurants do with their entire menu. The terrace spills onto the Carrefour de l'Odéon like it owns the square, and honestly, it kind of does. At lunch, the format is beautifully stripped down — no reservations, just walk-ins at the counter, eating shoulder to shoulder with strangers while demolishing a terrine that could make a grown person weep. Dinner is a different beast, a more composed prix fixe affair where Camdeborde flexes harder, but that counter lunch is where the soul lives. Bourdain adored this place, and specifically those blood sausage ravioli — the man wasn't wrong, they're a dark, silky gut-punch of pleasure. The desserts here don't coast either; the Paris-Brest is built like a small monument to choux and praline cream. Show up for lunch by noon or accept that you'll be standing on the sidewalk watching other people eat your food.
