Tight, no-nonsense room near the Madeleine that does exactly one thing — pot-au-feu — and has been doing it long enough to not care about trends. Steam curls off the broth before it hits the table, beef falling apart with a nudge of the spoon. Marrow, coarse salt, cornichons on the side. The kind of place where the waiter doesn't ask what you want because the menu barely exists. Go hungry, order the marrow, skip dessert.
