About Le Servan

The room has that worn-in Parisian thing — tiled floors, dark wood, nothing trying too hard — but the food pulls sharp left with Southeast Asian heat threaded through French technique. Blood sausage wontons that sound like a dare and taste like a revelation. Ginger pork belly with fat that melts before you finish chewing. Not cheap, and the 11th has plenty of cheaper bistros, but none doing this particular trick. Book ahead and grab a terrace seat if the weather cooperates.
