Tucked down a narrow lane off Rue Vieille du Temple, the terrace spills into a cobblestone pocket that the Marais forgot to gentrify. Le Trésor is Auvergnat to the bone — the kind of cooking that comes from cold mountains and long winters, landing on your table heavy, golden, and unapologetic. The aligot arrives in a cast iron pan, stretching off the spoon in long elastic ribbons of cheese and potato that refuse to let go. It is the dish that justifies the trip and everything else on the table orbits around it. The menu is short, seasonal, and does not try to be anything it is not. Come at lunch when the terrace catches the sun and the 4th arrondissement slows down just enough to let you breathe. Skip dinner — this is a lunch place, and the midday light on those cobblestones is half the experience.
